Chef La-toya Fagon is interviewed by NAC’s Michael Gauthier on her exciting culinary journey, from learning to cook for her family to opening Twist Catering in Toronto and how she came to be the personal chef to a few Toronto Raptors!

La-toya Fagon is the executive chef and owner of Twist Catering.
Born in Canada of Jamaican descent, she grew up cooking and eating “island foods,” and fell in love with creating these dishes at a young age. After graduating from George Brown’s Culinary Arts program, she continued to train at top restaurants and hotels throughout Toronto, Europe, and Mexico.
Having gained years of experience, La-toya’s creativity flourished and she began to fuse her traditional Caribbean ingredients and culinary style with Mediterranean flavours. This brought a taste of something new to the familiarity of home-style, soulful goodness. After months of experimentation, determination, and hard work, La-toya tapped into her entrepreneurial spirit and Twist Catering was created.

Chef La-toya’s drive for excellence and her knowledge of food, combined with her innovative spirit, has led to many ‘firsts’ for Twist Catering over the years. Twist was the first female black owned business hospitality partner for TIFF, and Chef La-toya was the first food expert on the Marilyn Denis Show in Toronto, and personal chef to the Toronto Raptors.
And, as evidenced by her many television appearances, Chef La-toya’s creativity, entertaining personality, and ability to engage audiences makes her a welcome presence wherever she is.

Canadienne d’origine jamaïcaine, La-toya Fagon est une amoureuse de la cuisine des îles qui côtoie les fourneaux depuis toute petite. Diplômée du programme d’arts culinaires du George Brown College, elle a exercé ses talents dans les cuisines des plus grands restaurants et hôtels de Toronto, d’Europe et du Mexique.
Avec cette expérience en poche, elle explore sa créativité et commence à marier ingrédients traditionnels des Caraïbes et saveurs méditerranéennes. Cette fusion apporte une touche de fraicheur à la cuisine familiale et réconfortante qu'elle affectionne. Après des mois d’expérimentation, de détermination et de travail acharné, sa fibre entrepreneuriale prend le dessus : elle ouvre sa propre adresse, Twist Catering.

Toujours en quête de l’excellence, La-toya Fagon se distingue par sa grande créativité. Depuis l’ouverture de Twist Catering, son parcours est jalonné de premières fois : elle a été la première femme noire à assurer les services de traiteur du TIFF. En plus d’être la cheffe personnelle des Raptors de Toronto, elle a été la première spécialiste en gastronomie invitée à l’émission télévisée canadienne The Marilyn Denis Show.
Son charisme irrésistible, sa créativité débordante et sa personnalité attachante font d’elle une invitée de choix des plateaux de télévision.
Michael Gauthier has worked in the arts and hospitality industries for 35 years, his experiences having taken him from his native Sudbury to Montreal to the Okanagan Valley to Ottawa. A graduate of the National Theatre School of Canada, Michael wrote children’s theatre for 10 years before embarking on a career as an administrator and entrepreneur. He has been a restaurateur (Le Plateau Bistro, ranked #1 on Trip Advisor for the region of Kelowna), the Executive Director of a French-language cultural centre and, for the National Arts Centre, Restaurant Manager, Guest Service and Events Manager, and now House Manager.
Michael has been published three times in French and once in English. He is thrilled to work in an environment that combines his passion for customer service with his interest in the arts.
Michael Gauthier travaille dans l’événementiel depuis 35 ans, ses expériences l’ayant emmené de son Sudbury d’origine à Montréal, Kelowna et Ottawa. Gradué de l’École nationale de théâtre du Canada, Michael a écrit du théâtre pour enfants pendant 10 ans avant de se lancer dans une carrière d’entrepreneur et d’administrateur. Il a occupé les rôles de propriétaire/sommelier du bistro Le Plateau (coté # 1 par Trip Advisor dans la région de Kelowna), de directeur exécutif du Centre culturel français de l’Okanagan et, pour le Centre national des Arts, de gestionnaire principal au restaurant 1 Elgin, gestionnaire principal des événements et banquets et aujourd’hui Gestionnaire des salles de spectacle.
Ses oeuvres théâtrales ont fait l’objet de trois publications en français et d’une en anglais. Il est ravi de pouvoir évoluer dans un endroit où il peut cultiver sa double passion pour le service à la clientèle et les arts.
