Chef Carmen Ingham is interviewed by NAC’s Michael Gauthier on his experience working in luxury resorts, responsible sourcing from our oceans, and the early experiences that sparked his passion for a career in the culinary arts.
Chef Ingham was the Resident Chef at the National Arts Centre from June to August 2023.
Originally from North Vancouver, Chef Carmen Ingham is passionate about showing off the ingredients that represent coastal British Columbia. His focus on locally-inspired cuisine is a perfect match for his current position as Executive Chef at the Wickaninnish Inn’s The Pointe Restaurant (Tofino, B.C.), a Relais & Chateaux property that celebrates the bounty and beauty of the area.
A graduate of Vancouver Community College’s culinary program, he has since gained 14 years of professional experience in some of British Columbia’s most prestigious restaurants and resorts, including a Sous Chef position at Sonora Resort on Sonora Island, B.C., and Head Chef at the award-winning Olo Restaurant in Victoria, B.C.
Chef Ingham’s talent was recognized early in his career. He placed second in the first annual Hawksworth Young Chef Scholarship, a Canada-wide cooking competition for chefs under 28 years old, in 2013, and was recognized as the “Le Creuset Rising Star” at the same event. In 2016, he was one of the top ten young chefs in Canada at San Pellegrino Young Chef competition. Most recently he was awarded Second place in the Garland Chef Challenge and the PEI International Shellfish Festival.
Constantly seeking to expand his skills, Chef Ingham has travelled across B.C., to Washington, California, Japan and Italy to volunteer at farms and assist staging in a diverse range of culinary environments. This hands-on and from-the-ground work with ingredients was “an enlightening experience,” he says, and highly influential in his approach to respecting the produce he uses.
From casual to fine dining, butchery to pastry, Chef Ingham brings a broad array of professional expertise to his position as Executive Chef at The Pointe Restaurant.
Natif de North Vancouver, le chef Carmen Ingham se fait un point d’honneur à donner leurs lettres de noblesse aux produits de la zone côtière de la Colombie-Britannique. D’inspiration locale, sa cuisine est en parfaite adéquation avec la vocation du restaurant The Pointe du Wickaninnish Inn (Tofino, Colombie-Britannique), établissement Relais & Châteaux qui met en valeur la beauté et la richesse de la région.
Diplômé du programme culinaire du Vancouver Community College, il a travaillé pendant quatorze ans dans les cuisines des plus grands restaurants et centres de villégiature de la Colombie-Britannique. Il a notamment été sous-chef au Sonora Resort sur l’île Sonora, avant de devenir chef principal du Olo Restaurant, établissement primé situé à Victoria.
Les talents du chef Ingham sont reconnus très tôt. En 2013, il décroche la deuxième place à la première édition du concours annuel pancanadien réservé aux chefs de moins de 28 ans de la Hawksworth Young Chef Scholarship Foundation. La même année, il reçoit le titre « Le Creuset Rising Star ». En 2016, il se classe parmi les dix meilleurs jeunes chefs du Canada au concours S.Pellegrino Young Chef Academy. Plus récemment, il finit deuxième au Défi des chefs Garland qui a lieu dans le cadre du Festival international des fruits de mer de l’Île-du-Prince-Édouard.
Grand esprit curieux, le chef Ingham a travaillé comme bénévole dans les exploitations agricoles de la Colombie-Britannique, de Washington, de la Californie, du Japon et de l’Italie et a participé à l’organisation de différents événements gastronomiques. Pour lui, avoir les mains dans la terre a été une expérience très enrichissante qui n’a fait que renforcer le respect qu’il voue aux produits du terroir.
De la cuisine familiale aux mets raffinés, des pièces de viande aux pâtisseries, le chef Ingham met sa grande polyvalence au service du restaurant The Pointe, en qualité de chef exécutif.
