Chef Amanda Ray is interviewed by NAC’s Michael Gauthier on her transition from working in big cities to overseeing the kitchen of the Drake Devonshire in Wellington (Ontario), sourcing from local farmers, and her collaboration with the NAC team.
Chef Ray was the Resident Chef at the National Arts Centre from March to June 2024.
One of Canada’s top female chefs, Executive Chef Amanda Ray, has over 20 years of experience in some of the country’s most respected kitchens. Chef Ray began her career with Oliver & Bonacini Hospitality in 2001. Starting at Auberge du Pommier, she then worked at Canoe, and as Chef de Cuisine/Executive Chef at Biff’s Bistro. During her years at Canoe, she completed a three-month stagiaire at Hotel Crillon le Brave in Provençe, France; a small luxury Relais & Châteaux property, where she cooked rustic Provençal cuisine and taught at the culinary school alongside Head Chef Philippe Monti. Her next role brought her to the opening of Bar George in Le Mount Stephen Hotel, downtown Montreal, where she was the Chef de Cuisine for the hotel and events space.
Chef Ray has also been involved in dozens of industry events and charity fundraisers, including Toronto Taste, Gold Medal Plates (Ontario Regional Champion, 2016), Canadian Chef’s Congress, What’s on the Table (in support of The Stop Community Food Centre), and the Brickworks Picnic (in support of Slow Food). She also appeared as guest chef at the Mission Hill Winery Epicurean dinner and at Michael Stadtlander’s globally renowned Eigensinn Farm in Grey County.
Moving to Prince Edward County brought Amanda to Drake Devonshire where she now combines her classic training and experience gained travelling to Vietnam, Israel, England, Italy, France, and Cape Cod, to create her own takes on The Drake’s comfort classics, while incorporating the vibrant local offerings and seasonal flavours the county is known for.

Elle débute sa carrière à l’Auberge du Pommier de la chaîne de restaurants Oliver & Bonacini Hospitality en 2001. Après un passage au Canoe, elle devient la cheffe de cuisine et cheffe exécutive du Biff’s Bistro. Alors en poste au Canoe, elle s’envole vers la France, en Provence, pour un stage de trois mois à l’Hôtel Crillon le Brave, un petit établissement de luxe Relais & Chtâteaux où elle sublime les saveurs de la cuisine provençale rustique, en plus d’enseigner à l’école culinaire aux côtés du premier chef, Philippe Monti. À l’inauguration du Bar George au Mount Stephen, hôtel du centre-ville de Montréal, elle prend la barre des cuisines de l’hôtel et des espaces événementiels.
La cheffe Ray est une habituée des événements gastronomiques et de charité. Elle a notamment participé au Toronto Taste, au gala Gold Medal Plates (championne 2016 de l’Ontario), au Canadian Chef’s Congress, à la soirée What’s on the Table (au profit du centre communautaire d’alimentation The Stop) et au pique-nique annuel à Evergreen Brick Works (au profit de Slow Food). Elle a également été sollicitée comme cheffe invitée à la vinerie Mission Hill et à la ferme Eigensinn du célèbre chef Michael Stadtlander (comté Grey).
Désormais installée dans le comté de Prince Edward, Amanda Ray est cheffe au Drake Devonshire. De formation classique, elle enrichit sa cuisine au gré de ses voyages au Vietnam, en Israël, en Angleterre, en Italie, en France et à Cape Cod, en revisitant les classiques réconfortants du Drake avec les ingrédients locaux et saisonniers qui font la marque du comté.
Michael Gauthier has worked in the arts and hospitality industries for 35 years, his experiences having taken him from his native Sudbury to Montreal to the Okanagan Valley to Ottawa. A graduate of the National Theatre School of Canada, Michael wrote children’s theatre for 10 years before embarking on a career as an administrator and entrepreneur. He has been a restaurateur (Le Plateau Bistro, ranked #1 on Trip Advisor for the region of Kelowna), the Executive Director of a French-language cultural centre and, for the National Arts Centre, Restaurant Manager, Guest Service and Events Manager, and now House Manager.
Michael has been published three times in French and once in English. He is thrilled to work in an environment that combines his passion for customer service with his interest in the arts.
Michael Gauthier travaille dans l’événementiel depuis 35 ans, ses expériences l’ayant emmené de son Sudbury d’origine à Montréal, Kelowna et Ottawa. Gradué de l’École nationale de théâtre du Canada, Michael a écrit du théâtre pour enfants pendant 10 ans avant de se lancer dans une carrière d’entrepreneur et d’administrateur. Il a occupé les rôles de propriétaire/sommelier du bistro Le Plateau (coté # 1 par Trip Advisor dans la région de Kelowna), de directeur exécutif du Centre culturel français de l’Okanagan et, pour le Centre national des Arts, de gestionnaire principal au restaurant 1 Elgin, gestionnaire principal des événements et banquets et aujourd’hui Gestionnaire des salles de spectacle.
Ses oeuvres théâtrales ont fait l’objet de trois publications en français et d’une en anglais. Il est ravi de pouvoir évoluer dans un endroit où il peut cultiver sa double passion pour le service à la clientèle et les arts.
