Chef Paul Toussaint is interviewed by NAC’s Michael Gauthier on his path from Haiti to Canada, and from studying law to one of Montreal’s most celebrated restauranteurs!
Chef Toussaint was the Resident Chef at the National Arts Centre from January to March 2024.
Originally from Jacmel, Haiti, Paul Toussaint moved to Canada at 20 to study law, but quickly realized he wasn’t an “office guy”. He soon discovered a passion for the world of fine dining and got a job at Toqué!, a globally recognized restaurant where he honed his culinary skills.
After contributing to post-earthquake reconstruction efforts in Haiti, Chef Paul took on the role of executive chef at Agrikol in Montreal. He crafted menus highlighting Haitian cuisine for their guests, and those of his Paul Toussaint kiosk in the TimeOut Market. By blending Caribbean influences, he also crafted a distinctive culinary experience at Kamúy restaurant and the TimeOut kiosk – Americas BBQ. In May 2022, he collaborated with Biergarten Belle Gueule and Aux Quartiers Belle Gueule pub as the executive chef for a culinary experience on one of the city’s finest terraces. The following summer, he was part of the chef team preparing meals for musicians at festivals like Osheaga, îLESONIQ, and Lasso.
Named Eater Montreal’s Chef of the Year 2021 and featured in Canada’s 100 Best in 2020, Paul channels all his resources to support local charitable causes, including Mission Bon Accueil and Artists for Peace and Justice.
A devoted art collector, Chef Toussaint passionately advocates for Caribbean artists. Transforming Kamúy into an open-air art gallery, he carefully integrates music into the Caribbean experience. He weaves a vibrant connection celebrating Caribbean culture and culinary innovation.
Originaire de Jacmel, en Haïti, Paul Toussaint s’envole à 20 ans vers le Canada pour poursuivre des études en droit. Il réalise très vite que le travail de bureau ne lui convient pas et se découvre une passion pour les arts culinaires. Il entre alors au restaurant mondialement connu, le Toqué!, pour y parfaire ses connaissances.
Après un coup de main en Haïti à la suite du tremblement de terre, le chef Paul Toussaint prend les rênes du restaurant Agrikol, à Montréal. Dans ses menus, il fait découvrir aux convives toute la richesse de la cuisine haïtienne. Ses plats sont également disponibles à son restaurant-comptoir au marché TimeOut à Montréal. Ambassadeur de la cuisine caribéenne, il propose une expérience culinaire des plus savoureuses au restaurant Kamúy et au comptoir Americas BBQ du marché TimeOut. En mai 2022, il devient chef exécutif du Biergarten Belle Gueule et du pub Aux Quartiers Belle Gueule, où il fait découvrir le vrai bonheur d'être à table, sur l’une des plus belles terrasses de la ville. L’été suivant, il intègre l’équipe de chefs qui cuisinent pour les artistes à l’affiche des festivals Osheaga, îLESONIQ et Lasso.
Couronné chef de l’année en 2021 par Eater Montreal et mis à l’honneur en 2020 par le magazine Canada’s 100 Best, Paul Toussaint a à cœur de soutenir les organisations à but non lucratif, notamment Mission Bon Accueil et Artists For Peace and Justice.
Collectionneur passionné des artistes des Caraïbes, le chef Toussaint a fait de son restaurant Kamúy une galerie d'art à ciel ouvert où la musique, soigneusement choisie, s’intègre naturellement dans cette expérience caribéenne. Il se plait à tisser des liens vibrants mettant à l’honneur la cuisine des îles avec une touche d’inventivité.
Michael Gauthier has worked in the arts and hospitality industries for 35 years, his experiences having taken him from his native Sudbury to Montreal to the Okanagan Valley to Ottawa. A graduate of the National Theatre School of Canada, Michael wrote children’s theatre for 10 years before embarking on a career as an administrator and entrepreneur. He has been a restaurateur (Le Plateau Bistro, ranked #1 on Trip Advisor for the region of Kelowna), the Executive Director of a French-language cultural centre and, for the National Arts Centre, Restaurant Manager, Guest Service and Events Manager, and now House Manager.
Michael has been published three times in French and once in English. He is thrilled to work in an environment that combines his passion for customer service with his interest in the arts.
Michael Gauthier travaille dans l’événementiel depuis 35 ans, ses expériences l’ayant emmené de son Sudbury d’origine à Montréal, Kelowna et Ottawa. Gradué de l’École nationale de théâtre du Canada, Michael a écrit du théâtre pour enfants pendant 10 ans avant de se lancer dans une carrière d’entrepreneur et d’administrateur. Il a occupé les rôles de propriétaire/sommelier du bistro Le Plateau (coté # 1 par Trip Advisor dans la région de Kelowna), de directeur exécutif du Centre culturel français de l’Okanagan et, pour le Centre national des Arts, de gestionnaire principal au restaurant 1 Elgin, gestionnaire principal des événements et banquets et aujourd’hui Gestionnaire des salles de spectacle.
Ses oeuvres théâtrales ont fait l’objet de trois publications en français et d’une en anglais. Il est ravi de pouvoir évoluer dans un endroit où il peut cultiver sa double passion pour le service à la clientèle et les arts.
