Chef John Morris loves the intensity and brightness of flavour in Chinese food. Although traditionally made with meat, John created this version of Mapo Dofu using tofu for his vegetarian sister.
John says his mother is responsible for his love of Chinese food. "She craved it all the time during her pregnancy with me – now if I don't eat Chinese food at least every two weeks I don't feel right." says John with a chuckle.
And don't worry about creating the perfect dish. "I think you just have to keep an open mind and an open heart when you’re preparing food, and you’re going to be pleased with the results."
